Sebastian’s Bistro sits on the water at Disney’s Caribbean Beach Resort, and the kitchen leans properly into its theme rather than gesturing at it — citrus, coconut, peppers and slow-cooked meats, served in a bright room that looks out over Barefoot Bay.

It is a calmer meal than anything you will find inside a park, and it is one of the resort restaurants that regular visitors recommend to each other rather than one that arrives on a first-timer’s list.

How the Skyliner changed the maths

Caribbean Beach is the Skyliner hub. That turned a resort with a pleasant restaurant into a place any guest can reach in a few minutes from EPCOT or Hollywood Studios, and Sebastian’s picked up a great deal of demand it was never sized for.

The dining room is not large, and it now competes for the same evening slot as guests finishing a park day two stations away.

Where it sits at Caribbean Beach

Caribbean Beach is one of the largest resorts on property, and Sebastian’s Bistro is at Old Port Royale, the central hub, rather than near any particular set of rooms. Guests staying there should allow time to walk or take the internal bus.

For everyone else it is straightforward: the Skyliner station is at the same hub, so you arrive a short walk from the restaurant rather than at the far end of the resort.

Availability tends to appear in the final week, when parties who booked speculatively decide their days differently. Sebastian’s sees this more than most because so many of its bookings are made as a maybe.
